Pineapple-Strawberry Agua Fresca

Agua Fresca, translated literally means Fresh Water.  It is a refreshingly cooling summertime drink, from Mexico.  The most common flavors are usually pineapple or melon, especially watermelon.  To describe the consistency is a little difficult, it is somewhere in between juice and a smoothie.

On a hot summer day, it's perfect!

Pineapple-Strawberry Agua Fresca
Ingredients:
1/2 pineapple, peeled and cored
12 strawberries
juice of 2 limes
2 tablespoons sugar
2/3 cup cold water

Place pineapple and strawberries in a food processor or blender and blend until very smooth.  Pass through a strainer to remove all pulp.

Return this smooth puree to the blender or food processor and add all other ingredients and blend well.

Frothy and Fruity, it's delicious as is or over ice.
