New Blogging Event Series...Taste of the Tropics-Chapter 1...Plantain

I am excited to be starting a new Blogging Event Series.  There are many different Blogging Events out there and I wanted to try to come out with something unique, but that also appealed to my own interests.  I LOVE Simply.Food's Flavours of...series as this appeals to my sense of global cuisine (by the way, I will be hosting this in August so start getting your Morroccan recipes ready).
With my Caribbean background, I love tropical food and then I thought what exactly determines a country to be classified as Tropical because so many countries are called this.  With some research, I learned that it is those countries that lie between the Tropic of Cancer & the Tropic of Capricorn.  This is a lot of countries, so I thought this is great because this event can go on.until infinity....with variety...introducing Taste of the Tropics

Every month a new theme will be determined...either a common ingredient from these tropical countries or the country itself can be the theme.  I will be looking for guest hosts for future months, so please email me at islandpalate@gmail.com if you would like to be the host with the following information:

Taste of the Tropics - Chapter 1's (June, 2012) theme will be one of my favorite vegetables - PLANTAIN
My love of plantain is evident in some of my previously published recipes like Kelewele, Tatale, Plantain Paneer Kebab & Banane Peze.  It is so versatile; can be used in anything from appetizers to desserts and it is also very nutritious, rich in Vitamin A, Vitamin C and potassium. It is naturally gluten free; a healthy alternative for those with gluten allergies.
Rules for the Event:
1 - Post any recipe that uses either green or yellow plantain.  Plantain flour can also be used.  Archived recipes may be used if they are reposted with the logo & the linkback.
2 - Recipe should be posted between June 1st and June 30th, 2012.  Recipes can be vegetarian or non-veg.  Origin of recipe should be from the cuisine of one of the countries listed below.
2 - The post must be linked back to this announcement page and usage of the logo is mandatory.
3 - After your recipe is posted, add it by using the linky tool below.
