Bean & Fruit Salad

Bean & Fruit Salad
I don't have much of an introduction today.  This salad is a wonderful addition to your summer menu that can be served at any occasion and everybody can eat it, regardless of dietary restrictions - It's naturally Vegan & Gluten Free!

Bean & Fruit Salad

Ingredients:
1 cup brown lentils, soaked overnight
2/3 cup garbanzo beans/chickpeas, soaked overnight
2 bay leaves
1 red bell pepper, chopped
1 large scallion
1 large jalapeno, finely chopped
1 cup pineapple, chopped
1 mango, chopped
1 large handful mint leaves, finely chopped
1 large handful cilantro, finely chopped
1/2 cup lime juice
3 tablespoons honey
1 teaspoon salt
1 tablespoon olive oil

Cook lentils and beans seperately with 1 bay leaf in each pot, until tender.  Drain and run cold water over them.  Transfer to a large mixing bowl.
In a small bowl, combine lime juice, honey, salt and mix well.  Add olive oil and whisk briskly.
Add all other ingredients to bowl with beans, including the lime-honey dressing and mix well.

Refrigerate for at least one hour to allow flavors to develop.  For optimal flavor, refrigerate overnight and serve the next day.  Served here with Salt & Pepper Flaxseed Crackers (recipe coming later in the month), it made a delicious light meal, perfect for the heat of summer!
