Nutella Fruit Sandwich

It's fig season in New York and I'm thrilled. I don't like dried figs but I LOVE fresh figs.  Soft and sweet, I love putting them in salads, sandwiches and just eating them on their own.  They marry well with cheese and vegetables, therefore are very versatile.  Unfortunately, they are only readily available for about 2 months of the summer.

Here's an idea for a delicious breakfast sandwich or snack, using fresh figs, which are now everywhere!!!

Nutella Fruit Breakfast Sandwich
Ingredients:
2 slices bread, toasted
1 tablespoon nutella
1 fresh fig, sliced
1/4 apple, peeled and thinly sliced
1 teaspoon lemon juice

Toss the apple in the lemon juice.
Spread nutella on both slices of bread.
Arrange fresh slices of fig and then apple and cover with the other slice of nutella spread bread.

Come back tomorrow for the recipe for the bread I used to make this sandwich.  It is a Whole Wheat Potato Bread. The small sized bread is because I used gluten free flours like almond and chickpea flour.  It's the perfect size to help you maintain portion control for your snacks.

This is a perfect breakfast/snack for kids and adults alike. Kids can enjoy it with a glass of milk and adults with a mug of coffee/tea.
