Although cinnamon is native only to Sri Lanka, it has been cultivated for many years in India, Egypt, Brazil, Vietnam & Indonesia.
Cinnamon has many health benefits and is used both in ancient Chinese medicine as well as Ayurvedic medicine. As well as being good for colds, indigestion, diarrhea and nausea, it is also good for Diabetics as it helps lower blood sugar levels.

Bakabana is one of those Indonesian dishes that got transplanted to Suriname, my grandfather's birthplace via these immigrants. Although I have tons of relatives still living in Suriname, I haven't yet made it there for a visit. However, I have enjoyed Surinamese food when I visit relatives in Holland as well as the 1 Suriname restaurant we have in NY, Warung Kario.
One of my favorite Surinamese snacks is Bakabana. Bakabana is ripe plantain dipped in a thick batter and deep fried. I decided to try and come up with a healthier baked version and this is what I came up with, which is pretty darn good if I do say so myself.
Healthy Bakabana

2 very ripe sweet plantain (skin should be black)
1 cup buttermilk
1/2 cup cornmeal
1/4 cup rice flour
3 tablespoon sugar
2 teaspoons ground cinnamon
Preheat oven to 400 F.
Slice plantain once vertically and then slice horizontally.
Place the buttermilk in a bowl.In a plate or a shallow bowl, mix cornmeal, flour, sugar and cinnamon.
Spray a cookie sheet with non stick spray.
Dip each plantain slice first in the buttermilk and then in the cornmeal mix.
Place on the cookie sheet.
Bake for 20 minutes. Flip over and bake another 20 minutes.
Sweet & Crispy on the outside and deliciously soft and moist plantain on the inside!
