Theme: Calcium Rich Foods
With broccoli and oodles of cheese, here is a delicious way to get your calcium boost!
Broccoli Stuffed Shells(click here for printable recipe)
1 stalk broccoli
1 1/4 cups Ricotta cheese
2/3 cups Mozzarella cheese plus 3 tablespoons, shredded
2 tablespoons Pecorino Romano or Parmesan cheese, shredded
1 teaspoon dried oregano
1/2 teaspoon crushed red pepper
1/4 cup parsley, finely chopped
8 oz. box Jumbo Pasta Shells
12 oz. pasta sauce
1 tablespoon olive oil.
salt to taste
Steam broccoli for 5 minutes. Chop finely.
Cook pasta shells in salted, boiling water for 10 minutes. Drain and run cold water over shells immediately for a minute. Toss with olive oil so they don't stick together while they cool.
Preheat oven to 350 F.
In a bowl, combine Ricotta, 2/3 cup Mozzarella, Pecorino, romano, oregano, parsley, pepper and salt. Mix to combine thoroughly.
In a large casserole dish, pour about 12 oz. pasta sauce on the bottom.
Take each shell and place about 1-2 tablespoons of filling inside and place on sauce. Repeat until all of the shells and filling is used up.
Top with extra 3 tablespoons of Mozzarella.
Place in oven for 40 minutes.
To serve, take a few shells out with a spatula and then spoon a little of the sauce on the bottom over the top.
