Chocolate Sponge Cake

Theme: BM Blogs - Harini - Kid's Delight - Warm Foods to Beat the Rain

This recipe was originally made for the Kid's Delight - Chocolate theme coming later in the month, but due to some scheduling mix ups I had to switch it to Week 1 of BM.  However, I think this cake is perfect for a rainy day too!

For this recipe, I followed Harini's recipe almost exactly, with very minor alteration.  As she is strict vegetarian, this is an eggless version.

Eggless Chocolate Sponge Cake

Ingredients:
1/2 cup evaporated milk
3/4 cup powdered sugar
1/4 cup butter, softened
1/4 cup oil
1 cup whole wheat flour
1/4 cup all purpose flour
1/4 cup unsweetened cocoa powder
2 teaspoons baking powder
1/2 cup carbonated soda (I used black cherry)

Preheat oven to 400 F.  Grease a shallow 8-inch cake pan.
Using an electric mixer, mix evaporated milk, butter, oil and sugar.
In a large bowl, sift all of the dry ingredients.  Add to previously mixed ingredients until thoroughly combined.
With a rubber spatula, fold in soda and mix well.
Pour into prepared cake pans and bake for 15 minutes.  Turn off stove but leave cake pan in oven for another 15 minutes.
Cool for a few minutes and flip over onto plate.

I decorated it with this Blueberry Frosting (this is a very thin frosting - really more of a glaze) & Sugar Cookies for my friend, Ana's birthday.



This cake is amazingly soft and fluffy (due to the powdered sugar and soda) and because it is not too sweet, it's easy to keep on eating it, which I don't know if that's a good thing or not :) because you just may want to eat the whole cake.

  5. Mireille the cake looks spongy..we dont get evaporated milk here, but I know its much lighter than condensed milk....so u think I can use condensed milk and cut down the sugar and add some plain milk?...
